300g fresh udon noodles

2 tablespoons chili oil

2 tablespoons soy sauce

1 tablespoon sesame oil

1 clove garlic, minced

1 small piece ginger, grated

2 green onions, chopped

1 tablespoon rice vinegar

1 teaspoon sugar

100g snap peas or edamame (optional)

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Udon Noodles: Bring a large pot of water to a boil. Add the fresh udon noodles and cook according to package instructions, usually around 2-3 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Sauce: In a small bowl, combine the chili oil, soy sauce, sesame oil, minced garlic, grated ginger, rice vinegar, and sugar. Whisk together until well combined.

      Sauté Optional Veggies: In a skillet over medium heat, add a splash of oil. If using, toss in the snap peas or edamame, sautéing for about 2-3 minutes until vibrant and tender-crisp.

        Combine Noodles and Sauce: In a large mixing bowl, add the drained udon noodles, sautéed veggies (if using), and the sauce. Toss everything together gently until the noodles are evenly coated with the chili oil sauce.

          Garnish and Serve: Divide the noodles into bowls and sprinkle with chopped green onions, sesame seeds, and fresh cilantro if desired.
