Ingredients

2 medium apples (such as Granny Smith or Honeycrisp), peeled and finely chopped

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk

1 large egg

1 tsp vanilla extract

Vegetable oil (for frying)

Powdered sugar (for dusting)

Instructions

Prepare the Apples: In a mixing bowl, combine the chopped apples with 1 tablespoon of granulated sugar and let them sit for about 10 minutes. This will help release some moisture and enhance the natural sweetness.

Make the Batter: In a separate large bowl, whisk together the flour, remaining sugar, baking powder, cinnamon, and salt. In another bowl, whisk together the milk, egg, and vanilla extract until well combined.

Combine Ingredients: Gradually pour the wet ingredients into the dry ingredient bowl, stirring gently until just combined. Be careful not to overmix! Fold in the chopped apples until evenly distributed.

Heat the Oil: In a deep skillet or heavy pot, heat about 2 inches of vegetable oil over medium heat (about 350°F/175°C). You can test if the oil is ready by dropping a small amount of batter into it—if it sizzles and rises to the top, it’s ready.

Fry the Bites: Using a small cookie scoop or tablespoon, carefully drop spoonfuls of the batter into the hot oil, making sure to leave space between each fritter for expansion. Fry for about 2-3 minutes on each side or until golden brown.

Drain Excess Oil: Once golden, use a slotted spoon to transfer the fritter bites onto a plate lined with paper towels to drain excess oil.

Dust with Sugar: While they’re still warm, dust the fritter bites generously with powdered sugar.

Serve and Enjoy: Serve the Apple Fritter Bites warm with a side of caramel sauce or vanilla ice cream for an extra indulgent treat!
