Ingredients

1 lb ground beef (preferably 80/20 for flavor)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, finely chopped (red or green)

1 small carrot, shredded

4 green onions, chopped (white and green parts separated)

1/4 cup soy sauce (low-sodium preferred)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili garlic sauce (adjust for heat preference)

Salt and pepper to taste

1 head of butter or romaine lettuce, separated into leaves

Optional toppings: chopped peanuts, cilantro, lime wedges

Instructions

Prepare the Lettuce: Start by rinsing the lettuce leaves gently under cold water. Pat them dry and set aside, keeping them whole to use as wraps.

Cook the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, stirring to crumble it as it cooks. Drain any excess fat.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Incorporate Vegetables: Add the chopped bell pepper, shredded carrot, and the white parts of the green onion to the skillet. Sauté everything together for about 3-4 minutes until the veggies are tender.

Season the Mixture: In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and chili garlic sauce. Pour this sauce over the beef and vegetable mixture. Stir well to combine and bring to a simmer for another 2-3 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Assemble the Wraps: To serve, spoon the ground beef mixture into individual lettuce leaves. Top with the green parts of the green onions, and sprinkle with chopped peanuts and cilantro if desired.

Garnish and Serve: Serve the lettuce wraps with lime wedges on the side for an extra zesty flavor. Enjoy while hot!
