Baked Feta Pasta

Ingredients
  

200g (7 oz) feta cheese, block

300g (10 oz) pasta (penne or fusilli works great)

400g (14 oz) cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Mix well.

      Add the Feta: Place the block of feta cheese in the center of the dish among the tomatoes. Drizzle a little olive oil over the feta and season it with salt and pepper.

        Bake: Bake in the preheated oven for 25-30 minutes, or until the tomatoes are blistered and the feta is soft and creamy.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

            Combine Ingredients: Once the baking is done, remove the dish from the oven. Use a fork to mash the feta and mix it with the tomatoes to form a creamy sauce. Add the cooked pasta and a splash of the reserved pasta water to the dish, stirring until well combined. Adjust the consistency with more pasta water if needed.

              Garnish and Serve: Top with fresh basil leaves and sprinkle with grated Parmesan cheese, if desired. Serve immediately and enjoy your delicious Baked Feta Pasta!
