1 lb boneless, skinless chicken breast, diced

1 cup cornstarch

2 large eggs, beaten

1 cup Panko breadcrumbs

1/2 tsp salt

1/2 tsp pepper

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

2 tbsp lime juice

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1/4 cup chopped green onions

Fresh cilantro for garnish (optional)

Sesame seeds for garnish (optional)

Instructions
 

Prep the Chicken: Start by seasoning the diced chicken breast with salt and pepper.

    Breading Station: In three separate bowls, place the cornstarch in one, beaten eggs in the second, and Panko breadcrumbs in the third.

      Coat the Chicken: Dredge each piece of chicken first in cornstarch, then dip in the egg, and finally coat with Panko breadcrumbs. Make sure each piece is fully covered.
