Bang Bang Chicken Bowls

For the Chicken:

1 lb boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon lime juice

For the Bowls:

2 cups cooked jasmine rice

1 cup shredded lettuce (green leaf or romaine)

1 carrot, julienned

1/2 cucumber, thinly sliced

1 avocado, sliced

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prepare the Chicken:

    - Start by marinating the chicken breasts in buttermilk for at least 30 minutes, or overnight for more flavor.

      Bread the Chicken:

        - In a shallow dish, mix flour, garlic powder, onion powder, paprika, salt, and pepper. Remove the chicken from the buttermilk and coat each piece thoroughly in the flour mixture.

          Fry the Chicken:

            - Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded chicken pieces. Cook for about 5-7 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F). Drain on paper towels.

              Make the Bang Bang Sauce:

                - In a bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and taste to adjust the spiciness if needed.

                  Assemble the Bowls:

                    - Start with a base of jasmine rice in each bowl. Layer with shredded lettuce, julienned carrot, sliced cucumber, and avocado.

                      Add the Chicken:

                        - Slice the fried chicken and place it atop the fresh vegetables.

                          Drizzle and Serve:

                            - Generously drizzle the Bang Bang sauce over the chicken. Garnish with fresh cilantro and serve with lime wedges on the side for an added zing.
