Barley Porridge

Ingredients
  

1 cup pearl barley

4 cups water or vegetable broth

1/2 teaspoon salt

1 tablespoon olive oil or butter

1 small onion, finely chopped

2 cloves garlic, minced

1 carrot, diced

1 stalk celery, diced

1/2 teaspoon black pepper

1 teaspoon dried thyme or mixed herbs

1/4 cup grated Parmesan cheese (optional)

Fresh herbs for garnish (e.g., parsley or chives)

Instructions
 

Rinse the Barley: Start by rinsing the pearl barley in a fine mesh strainer under cold water for about 1 minute. This helps remove any debris and excess starch.

    Cook the Barley: In a large pot, combine the rinsed barley, water (or broth), and salt. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the barley is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

      Sauté the Aromatics: In a separate skillet, heat the olive oil or butter over medium heat. Add the chopped onion, and sauté for about 5 minutes, until it turns translucent. Stir in the garlic, carrot, and celery, cooking for another 5 minutes.

        Season the Mixture: Add the black pepper and thyme (or mixed herbs) to the sautéed vegetables. Mix well to combine and let flavors infuse for about 2-3 minutes.

          Mix Everything Together: Once the barley is cooked, reduce the heat to low, and stir the sautéed vegetables into the pot of barley. Cook together for an additional 5 minutes, allowing the flavors to meld together.

            Finish with Cheese (Optional): If using Parmesan cheese, stir it in now for an extra creamy texture. Adjust seasoning with more salt and pepper if needed.

              Serve: Ladle the warm barley porridge into bowls and garnish with freshly chopped herbs.
