BBQ Chicken Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup cooked chicken, shredded

½ cup BBQ sauce (your favorite brand)

1 cup sharp cheddar cheese, shredded

¼ cup mozzarella cheese, shredded

2 tablespoons butter

¼ teaspoon garlic powder (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Mix the Chicken and BBQ Sauce: In a medium bowl, combine the shredded chicken with BBQ sauce, mixing until the chicken is evenly coated. Set aside.

    Prepare the Bread: Spread butter on one side of each slice of sourdough bread. If using garlic powder, sprinkle a little on the butter for added flavor.

      Assemble the Sandwich: Place one slice of bread, butter-side down, in a skillet over medium heat. Layer half of the cheddar cheese on the bread. Add the BBQ chicken mixture evenly, followed by the mozzarella cheese, and then top with the remaining cheddar cheese. Finally, place the second slice of bread on top, butter-side up.

        Grill the Sandwich: Cook for 3-5 minutes on medium heat, or until the bottom slice is golden brown. Carefully flip the sandwich using a spatula and grill for an additional 3-5 minutes, or until the other side is golden and the cheese is melted.

          Serve: Once grilled to perfection, remove from the skillet. Let it cool for a minute, then slice in half. Garnish with fresh parsley if desired. Serve warm with extra BBQ sauce on the side for dipping.
