Ingredients

400g spaghetti or tagliatelle

500g ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, finely diced

1 celery stalk, finely diced

1 can (400g) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red chili flakes (optional)

1/2 cup beef broth or red wine

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Olive oil, for cooking

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or tagliatelle and cook according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta cooking water.

Sauté the Vegetables: In a large skillet over medium heat, drizzle a little olive oil. Add chopped onion, carrots, and celery. Cook for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

Brown the Beef: Increase the heat to medium-high, add the ground beef, and break it up with a wooden spoon. Cook until browned, about 5-6 minutes. Drain excess fat if necessary.

Add Tomato Ingredients: Stir in the crushed tomatoes, tomato paste, oregano, basil, and red chili flakes (if using). Pour in the beef broth or red wine. Season with salt and black pepper to taste.

Simmer the Sauce: Bring the sauce to a gentle boil, then reduce the heat to low. Let it simmer for about 20-30 minutes, stirring occasionally, until the sauce thickens and the flavors meld. If it becomes too thick, add a little reserved pasta water to adjust the consistency.

Mix Pasta and Sauce: Add the cooked pasta directly into the sauce and toss to combine, ensuring the pasta is well coated. If desired, add another splash of pasta water for creaminess.

Serve: Plate the Beef Ragu Pasta, garnishing with fresh basil leaves and a generous amount of grated Parmesan cheese.

Enjoy! Serve hot with crusty bread or a green salad on the side.
