Ingredients

For the Dumplings:

1 cup all-purpose flour

½ teaspoon salt

½ teaspoon turmeric powder

½ teaspoon ground ginger

4 tablespoons water

1 tablespoon olive oil

1 cup finely chopped vegetables (carrots, green beans, and bell peppers)

1 cup diced tofu or chicken (optional)

2 tablespoons sesame oil

For the Soup:

4 cups vegetable or chicken broth

1 can (400ml) coconut milk

2 tablespoons red curry paste (adjust for spice level)

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon brown sugar

Fresh cilantro for garnish

Instructions

Prepare the Dumpling Dough: In a mixing bowl, combine the all-purpose flour, salt, turmeric, and ground ginger. Gradually add the water and olive oil until a smooth dough forms. Knead for a few minutes until it becomes elastic. Cover and let it rest for 30 minutes.

Make the Dumpling Filling: In a skillet, heat the sesame oil over medium heat. Add the chopped vegetables and protein (if using) and sauté for about 5-7 minutes, until the veggies are tender. Season with a pinch of salt and allow to cool.

Form the Dumplings: Divide the rested dough into small pieces, roll each piece into a circle about 2 inches in diameter. Place a small spoonful of the filling in the center, fold the dough over, and seal the edges by pinching tightly.

Prepare the Soup: In a large pot, combine the vegetable or chicken broth and bring to a simmer. Stir in the coconut milk, red curry paste, soy sauce, lime juice, and brown sugar. Allow it to simmer for about 10 minutes to meld the flavors.

Cook the Dumplings: Carefully add the dumplings to the simmering soup. Cook for an additional 10-15 minutes, or until the dumplings are puffed and cooked through.

Serve: Ladle the soup with dumplings into bowls, garnish with fresh cilantro, and serve hot.
