Biscuits and Chorizo Gravy

3/4 cup buttermilk

1/2 pound spicy chorizo sausage, removed from casing

1 tablespoon olive oil (if needed)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Instructions
 

Make the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.

        - Add the chilled, cubed butter to the flour mixture. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

                        - Gradually whisk in the milk, stirring constantly to avoid lumps.

                          - Add the garlic powder, onion powder, and season with salt and pepper to taste. Cook until the gravy thickens, about 5-8 minutes.

                            Assemble:
