Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

3 tablespoons freshly cracked black pepper

1 tablespoon cornstarch

2 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, sliced

1 green bell pepper, sliced

2 green onions, chopped (for garnish)

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 tablespoon honey

½ teaspoon sesame oil

Salt to taste

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, oyster sauce, rice vinegar, honey, and cornstarch. Let it marinate for at least 30 minutes to enhance the flavors.

Prepare the Stir-Fry Base: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

Cook the Chicken: Add the marinated chicken to the skillet, spreading it out in a single layer. Let it sear for about 4-5 minutes without stirring to get a nice brown crust. Stir-fry until the chicken is cooked through and no longer pink, about an additional 5 minutes.

Add the Vegetables: Once the chicken is cooked, toss in the sliced red and green bell peppers. Stir-fry everything together for another 2-3 minutes until the peppers soften slightly.

Season and Final Touches: Sprinkle the freshly cracked black pepper all over the chicken stir-fry, adjusting the amount to your taste. Drizzle the sesame oil over the dish and give it a final toss to combine everything well.

Garnish and Serve: Remove from heat, garnish with chopped green onions, and adjust salt if needed. Serve hot over steamed rice or noodles.
