Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of your choice)

1 medium carrot, grated

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts (or pecans)

1/4 cup raisins (or dried cranberries)

2 tablespoons maple syrup (or honey)

1/2 teaspoon vanilla extract

A pinch of salt

Cream cheese (optional, for topping)

Instructions
 

In a medium saucepan, combine the rolled oats and almond milk over medium heat.

    Stir in the grated carrot, cinnamon, nutmeg, and a pinch of salt. Bring the mixture to a gentle boil.

      Once boiling, reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid.

        Stir in the chopped walnuts, raisins, maple syrup, and vanilla extract. Mix well and let it cook for another 1-2 minutes to combine the flavors.

          Remove from heat and let it sit for a couple of minutes to thicken to your desired consistency.

            Serve hot in bowls, topping with a dollop of cream cheese if desired, and extra walnuts or raisins for garnish.
