Cheesy bacon potato breakfast casserole

4 large russet potatoes, peeled and diced

6 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

1 bell pepper, diced (any color)

4 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

    Prepare the Potatoes: In a large pot, boil the diced potatoes in salted water until fork-tender, approximately 10-15 minutes. Drain and set aside.

      Cook the Bacon: In a skillet, cook the strips of bacon until crispy. Remove from the skillet, crumble, and set aside. Use the bacon fat in the skillet to sauté the onion and bell pepper until soft, about 5 minutes.

        Mix Ingredients: In a large mixing bowl, combine the cooked potatoes, sautéed onions and peppers, crumbled bacon, cheddar cheese, and Parmesan cheese.

          Prepare the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper. Pour the egg mixture over the potato and cheese mixture, stirring carefully to combine all ingredients well.

            Transfer to Baking Dish: Pour the entire mixture into the prepared baking dish, spreading it evenly.

              Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the casserole is set and the top is golden brown.

                Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley if desired. Cut into squares and serve warm for a hearty breakfast.
