For the Cheesy Beef Burritos:

1 lb ground beef

1 cup diced onions

2 cloves garlic, minced

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

2 cups shredded cheddar cheese

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

4 large flour tortillas

Optional: Jalapeños, sour cream, and salsa for serving

For the Crispy Fries:

2 large russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

        - Spread the fries in a single layer on a baking sheet lined with parchment paper.

          - Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

            Cook the Beef Filling:

              - In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

                - Add the diced onions and minced garlic to the skillet. Sauté until the onions become translucent, about 3-4 minutes.

                  - Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 3-5 minutes, until everything is heated through.

                    - Remove from heat and mix in 1 cup of shredded cheddar cheese until melted and well combined.

                      Assemble the Burritos:

                        - Lay a flour tortilla on a flat surface. Place a generous amount of the cheesy beef mixture in the center, then top with a little more shredded cheese.

                          - Fold the sides of the tortilla inwards over the filling, then roll it up tightly from the bottom to the top to form a burrito. Repeat for the remaining tortillas.
