16 oz cheese-filled tortellini

1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

2 cups shredded Mexican blend cheese

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

    Brown the Beef: In a large skillet, over medium heat, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until softened. Add the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Season the Mixture: Stir in the chili powder, cumin, salt, and pepper, and cook for another minute. Then, add the black beans, corn, and enchilada sauce to the skillet. Mix well to combine and heat through for about 2-3 minutes.
