Cheesy Garlic Chicken Wraps

2 large chicken breasts, diced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

1 cup fresh spinach leaves

½ cup diced tomatoes (optional)

Sour cream or ranch dressing, for serving (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, smoked paprika, and Italian herbs. Cook for about 6-8 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink in the center.

    Add Garlic: Once the chicken is cooked, add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant. Remove skillet from heat.

      Mix Cheese: In a large mixing bowl, combine the cooked chicken and garlic with the shredded mozzarella and cheddar cheese. Stir until the cheese is evenly distributed with the chicken.

        Assemble the Wraps: On each tortilla, layer a handful of fresh spinach and a few diced tomatoes if using. Spoon an equal portion of the cheesy chicken mixture onto each tortilla.

          Wrap It Up: Fold in the sides of the tortilla and then roll it up from the bottom to secure the filling. Repeat with the remaining tortillas.

            Toast the Wraps: Wipe down the skillet and return it to medium heat. Place the wraps seam-side down in the skillet and toast for about 2-3 minutes on each side until golden brown and crispy. You can also use a panini press for a more even toasting.
