1 cup canned baked beans (or homemade baked beans)

1 tablespoon olive oil

1/2 onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon garam masala

1/2 teaspoon smoked paprika

Salt, to taste

Freshly cracked black pepper, to taste

1/2 cup grated cheese (cheddar or a blend of mozzarella and cheddar)

4 slices of thick-cut bread (whole grain or sourdough)

Fresh cilantro, chopped (for garnish)

Optional: a squeeze of lemon juice
