Ingredients
  

1 cup cooked chicken, shredded

1 ripe avocado, mashed

1/2 cup shredded mozzarella cheese

1/4 cup Greek yogurt or mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper, to taste

4 slices of whole grain or sourdough bread

1 tablespoon olive oil or butter

Fresh baby spinach or arugula (optional)

Sliced tomato (optional)

Instructions
 

In a medium bowl, combine the shredded chicken, mashed avocado, mozzarella cheese, Greek yogurt or mayonnaise, lime juice, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

    Preheat a non-stick skillet over medium heat and add olive oil or butter, allowing it to melt and coat the pan.

      Spread half of the chicken avocado mixture onto two slices of bread, then top with fresh spinach or arugula and sliced tomato if using. Place the other two slices of bread on top to make sandwiches.

        Carefully place the sandwiches in the skillet. Cook for about 3-4 minutes on each side, pressing down lightly with a spatula, until the bread is golden brown and the cheese is melting.

          Once cooked, remove the sandwiches from the skillet and let cool for a minute before slicing in half.
