Chicken Avocado Melt Sandwich

Ingredients
  

2 cups cooked chicken, shredded or diced

1 ripe avocado, mashed

1/2 cup Greek yogurt or mayonnaise

1 teaspoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

4 slices of whole grain bread (or your favorite sandwich bread)

Butter or olive oil for grilling

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a large mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt (or mayonnaise), lime juice, garlic powder, salt, and black pepper. Mix well until all ingredients are fully incorporated and creamy.

    Preheat a skillet or griddle over medium heat and add a little butter or olive oil.

      Spread a generous amount of the chicken and avocado mixture onto two slices of the bread. Top each with a quarter of the shredded mozzarella cheese.

        Place the remaining two slices of bread on top to form sandwiches.

          Once the skillet is hot, add the sandwiches and cook until the bread is golden brown, about 3-4 minutes. Carefully flip the sandwiches and cook until the other side is golden and the cheese is melted, about another 3-4 minutes. You can cover the skillet with a lid to help the cheese melt faster.

            Remove the sandwiches from the skillet and let them cool for a minute. Slice in half, garnish with fresh cilantro or parsley if desired, and serve immediately.
