1 pound elbow macaroni

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) red kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 cups shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Brown the Meat: Add the ground beef (or turkey) to the skillet. Use a spoon to break it up as it cooks. Cook until browned and no longer pink, about 6-8 minutes. Season with salt, pepper, chili powder, cumin, smoked paprika, and cayenne pepper.

        Combine Ingredients: Stir in the kidney beans, black beans, and diced tomatoes with their juices. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld together.
