Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) beef flank steak, thinly sliced against the grain

2 cups broccoli florets

1 medium onion, sliced

3 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp cornstarch

1 tbsp vegetable oil

1 tbsp sesame oil

1 tsp sugar

1/4 cup water

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Cooked jasmine rice, for serving

Instructions
 

Marinate the Beef: In a bowl, combine the thinly sliced beef with soy sauce, cornstarch, and a pinch of pepper. Allow it to marinate for 15-20 minutes.

    Blanch the Broccoli: In a pot of boiling water, add the broccoli florets. Blanch for 2-3 minutes until they are bright green and slightly tender. Drain and immediately place in ice water to stop the cooking process. Set aside.

      Prepare the Sauce: In a bowl, mix together the oyster sauce, sugar, sesame oil, and water. Stir well and set aside.

        Cook the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef and set aside.

          Sauté Aromatics: In the same skillet, add a little more oil if necessary. Add garlic, ginger, and onion, and sauté for about 2 minutes until fragrant and the onion is translucent.

            Combine Everything: Return the beef to the skillet along with the blanched broccoli. Pour in the prepared sauce and add red pepper flakes if using. Stir everything together and cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.

              Serve: Taste and adjust seasoning with salt and pepper if needed. Serve hot over jasmine rice.
