4 boneless, skinless chicken thighs

1 cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon hot sauce (adjust to taste)

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

Lemon wedges, for serving

Prepare the Cowboy Butter: In a medium bowl, combine softened butter, minced garlic, Worcestershire sauce, Dijon mustard, hot sauce, parsley, chives, smoked paprika, salt, and pepper. Mix well until all ingredients are incorporated.

    Marinate the Chicken: Spread half of the cowboy butter mixture over the chicken thighs, ensuring they are fully coated. Let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Cook the Chicken: Preheat your grill or a large skillet over medium-high heat. If you're using a grill, oil the grill grates to prevent sticking. Cook the marinated chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C) and have a nice golden crust.

        Add Extra Flavor: In the last minute of cooking, spoon some of the remaining cowboy butter over the chicken thighs to enhance flavor and keep them moist.

          Serve: Once fully cooked, remove the chicken from heat. Let it rest for 5 minutes before slicing. Serve with lemon wedges and any remaining cowboy butter for dipping.
