8 oz fusilli pasta

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup black beans, rinsed and drained

1/2 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 cup shredded sharp cheddar cheese

1/2 cup ranch dressing

1 tbsp lime juice

1 tsp smoked paprika

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prep the Veggies: While the pasta cooks, prepare the vegetables. Halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion and cilantro.
