Creamy Cajun Chicken Pasta

2 boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz fettuccine pasta

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions. Drain and set aside, reserving about a cup of pasta water.

    Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning, salt, and pepper until well coated.

      Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.

          Make the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir to combine. Let the sauce simmer for 5 minutes until it thickens slightly.

            Combine Ingredients: Add the cooked chicken back to the skillet along with the halved cherry tomatoes. Toss everything together to coat in the creamy sauce.

              Mix with Pasta: Add the cooked fettuccine to the skillet and gently combine. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

                Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Adjust seasoning to taste with additional salt and pepper if needed.

                  Serve: Plate the creamy Cajun chicken pasta, garnish with chopped fresh parsley, and enjoy!
