Ingredients
  

1 lb chicken sausage, sliced (your choice of spicy or mild)

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

2 cups baby spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and sauté until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add the diced onion and cook until softened (about 3-4 minutes). Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the orzo pasta and toast it slightly for 2 minutes. This enhances the flavor.

        Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the broth.

          Return the cooked chicken sausage to the skillet along with the sun-dried tomatoes and heavy cream. Stir well to combine, and let it simmer for another 5 minutes so the flavors meld.

            Add the baby spinach, Italian seasoning, and season with salt and pepper to taste. Stir until the spinach wilts.

              Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

                Serve hot, garnished with fresh basil if desired.
