Creamy Smothered Chicken and Rice

4 boneless, skinless chicken thighs

1 cup long-grain white rice

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 teaspoon paprika

½ teaspoon dried thyme

½ teaspoon black pepper

1 tablespoon olive oil

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Salt to taste

Prep the Chicken: Season the chicken thighs with salt, black pepper, and paprika on both sides.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onions become translucent.

        Combine Rice and Broth: Stir in the rice and toast it in the skillet for another 2 minutes. Then pour in the chicken broth, bring to a simmer, and reduce the heat to low.

          Add Cream and Seasonings: Stir in the heavy cream, thyme, and additional salt and pepper to taste. Make sure the mixture is well combined.

            Return Chicken to Skillet: Place the seared chicken thighs on top of the rice mixture. Cover the skillet with a lid and cook on low heat for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.

              Add Peas (Optional): If using peas, add them during the last 5 minutes of cooking. Cover and let them steam.

                Serve: Once everything is cooked, fluff the rice with a fork and garnish with fresh parsley before serving.
