Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Vegetable oil for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp honey

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine the chicken pieces and buttermilk, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.

Prepare the Dry Mixture: In another bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

Coat the Chicken: Remove the chicken from the buttermilk and allow any excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour and set aside.

Heat the Oil: In a large skillet or deep fryer, heat about 1-2 inches of vegetable oil to 350°F (175°C).

Fry the Chicken: Working in batches, carefully add the coated chicken pieces to the hot oil. Fry until golden and crispy, about 5-7 minutes. Use a slotted spoon to remove the chicken and transfer it to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Adjust the sriracha to your desired spice level.

Toss and Serve: In a large mixing bowl, add the crispy chicken and drizzle the bang bang sauce over the top. Toss gently until the chicken is well-coated.

Garnish and Present: Serve the crispy bang bang chicken on a platter. Sprinkle with sliced green onions and sesame seeds for added texture and flavor.
