Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

Oil for frying (vegetable or canola)

For the Bang Bang Sauce:

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp Sriracha (adjust for spice level)

1 tsp lime juice

1 tsp honey

1/2 tsp sesame oil

Chopped green onions for garnish

Sesame seeds for garnish

Instructions
 

Prepare the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, lime juice, honey, and sesame oil until smooth. Set aside.

    Prep the Salmon Bites:

      - In a shallow bowl, mix together panko breadcrumbs, flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - In a separate bowl, beat the egg.

          Coat the Salmon:

            - Dip each salmon cube into the beaten egg, allowing any excess to drip off.

              - Roll the salmon piece into the breadcrumb mixture until fully coated. Transfer the coated salmon bites to a plate and repeat with remaining cubes.

                Cook the Salmon Bites:

                  - Heat about 1 inch of oil in a large skillet over medium-high heat until shimmering (around 350°F).

                    - Carefully add the salmon bites in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side.

                      - Use a slotted spoon to remove the salmon bites and place them on a paper towel-lined plate to drain excess oil.

                        Serve:

                          - Arrange the crispy Bang Bang Salmon Bites on a serving platter, drizzle with Bang Bang sauce, and sprinkle with chopped green onions and sesame seeds.

                            - Serve remaining sauce on the side for dipping.
