Ingredients

4 boneless, skinless chicken breasts

4 slices of ham (preferably Black Forest or prosciutto)

4 slices of Swiss cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1/4 cup Dijon mustard

Salt and pepper to taste

1/2 cup buttermilk

1 tablespoon olive oil (for frying)

For the Creamy Swiss Cheese Sauce:

1 cup heavy cream

1 cup grated Swiss cheese

1 tablespoon butter

1 tablespoon all-purpose flour

1 clove garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Carefully pound each chicken breast between two pieces of plastic wrap or parchment paper to an even thickness of about 1/2 inch. Season both sides with salt and pepper.

Assemble the Cordon Bleu: Lay out each chicken breast, spread a thin layer of Dijon mustard on top, then place a slice of ham followed by a slice of Swiss cheese. Roll the chicken tightly, starting from the narrow end, and secure with toothpicks.

Dredge the Chicken: Set up a station with three shallow bowls: one with flour (seasoned with salt and pepper), another with the beaten eggs and buttermilk, and the third with breadcrumbs. Dip each chicken roll into flour, then the egg mixture, and finish with a coat of breadcrumbs.

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Once hot, add the rolled chicken breasts and fry until golden brown on all sides, approximately 4-5 minutes per side. Ensure the chicken is cooked through (internal temperature should be 165°F/75°C). Remove and let rest on a paper towel to absorb excess oil.

Prepare the Creamy Swiss Cheese Sauce: In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in flour and cook for 1 minute. Gradually whisk in heavy cream until smooth, then add grated Swiss cheese. Keep stirring until the cheese has melted and the sauce thickens. Season with salt and pepper to taste.

Serve: Slice the Chicken Cordon Bleu into medallions and arrange on plates. Drizzle the creamy Swiss cheese sauce over the top and garnish with freshly chopped parsley.
