For the Beef Filling:

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 Scotch bonnet pepper, finely chopped (adjust to taste)

1 tsp fresh thyme leaves

1 tsp allspice powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

2 green onions, chopped

1 tbsp soy sauce

2 tbsp vegetable oil

For the Dough:

2 cups all-purpose flour

½ tsp salt

½ tsp turmeric powder

½ cup unsalted butter, cold and cubed

6-8 tbsp ice-cold water

1 egg, beaten (for egg wash)

Prepare the Beef Filling: In a skillet, heat 2 tbsp of vegetable oil over medium heat. Add chopped onions and garlic, sauté until translucent. Then, add the ground beef and cook until browned. Stir in the Scotch bonnet pepper, thyme, allspice, paprika, salt, and black pepper. Cook for an additional 5 minutes.

    Finish the Filling: Add the chopped green onions and soy sauce to the skillet, stir well, and cook for another 2 minutes. Remove from heat and let it cool while you prepare the dough.

      Make the Dough: In a large bowl, combine the flour, salt, and turmeric powder. Mix in the cold, cubed butter using your fingertips or a pastry cutter until the mixture resembles coarse crumbs.

        Form the Dough: Gradually add ice-cold water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork it. Wrap in plastic wrap and refrigerate for 30 minutes.

          Assemble the Patties: Preheat your oven to 375°F (190°C). On a floured surface, roll out the dough to about ¼-inch thickness. Cut circles using a 5-6 inch cutter. Place about 2 tablespoons of beef filling in the center of each circle.

            Seal the Patties: Fold the dough over to create a half-moon shape, and press the edges together to seal. You can crimp the edges with a fork for a decorative touch. Place the patties on a baking sheet lined with parchment paper.

              Egg Wash: Brush the tops of the patties lightly with the beaten egg to give them a beautiful golden color.

                Bake: Bake in the preheated oven for 25-30 minutes or until the patties are golden brown. Allow them to cool for a few minutes before serving.
