Dopiazeh Aloo: A Flavorful Persian Potato Curry!

4 medium-sized potatoes, peeled and cut into cubes

2 large onions, thinly sliced

3 tablespoons vegetable oil

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon coriander powder

1 teaspoon garam masala

1 tablespoon tomato paste

2 cups water

Salt to taste

Fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Sauté the Onions: Heat the vegetable oil in a large pot over medium heat. Once hot, add the sliced onions and sauté until they turn golden brown, about 8-10 minutes.

    Add Spices: Continue to stir the onions and add the cumin seeds, turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2-3 minutes, until fragrant.

      Incorporate Potatoes: Add the cubed potatoes to the pot, stirring to coat them well with the spice mixture. Sauté for about 5 minutes until the potatoes begin to soften.

        Add Tomato Paste: Stir in the tomato paste and mix thoroughly with the potatoes. This step adds a beautiful color and depth of flavor.

          Simmer: Pour in the water, ensuring the potatoes are submerged. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes or until the potatoes are tender.

            Finish with Garam Masala: Once the potatoes are cooked through, stir in the garam masala and adjust the seasoning if necessary. Allow it to simmer for another 5 minutes.

              Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro. Serve hot with lemon wedges on the side, perfect over steamed rice or with flatbread.
