2 large English cucumbers

1 teaspoon salt

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 garlic clove, minced

1 tablespoon toasted sesame seeds

2 green onions, sliced

A handful of fresh cilantro, chopped (optional)

Red pepper flakes (to taste)

Prepare the Cucumbers: Slice the cucumbers thinly using a sharp knife or a mandoline. Place them in a large bowl and sprinkle with salt. Toss lightly and let them sit for about 10-15 minutes to draw out excess water.

    Make the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well combined.

      Drain the Cucumbers: After 15 minutes, drain any excess water from the cucumbers and pat them dry with a paper towel.

        Combine: Add the drained cucumbers to the bowl with the dressing. Toss well to ensure all cucumbers are coated.

          Add Toppings: Sprinkle the toasted sesame seeds, sliced green onions, and chopped cilantro over the top. If you like a bit of heat, add red pepper flakes according to your taste.
