Easy Asian Cucumber Salad

With garlic, ginger, and a sprinkle of toasted sesame seeds, every bite is a burst of flavor. Ingredients
  

2 large English cucumbers, thinly sliced

1 teaspoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar or honey

1 garlic clove, minced

1 teaspoon grated fresh ginger

2 green onions, finely chopped

1 tablespoon sesame seeds (toasted)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

In a large mixing bowl, toss the thinly sliced cucumbers with salt. Let them sit for about 10-15 minutes to draw out excess moisture.

    While the cucumbers are resting, prepare the dressing. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), minced garlic, and grated ginger until well combined.

      After 15 minutes, gently squeeze the cucumbers to remove any additional liquid and drain them well.

        Add the dressing to the bowl with the cucumbers, along with the chopped green onions and toasted sesame seeds. Toss everything together until the cucumbers are evenly coated.

          Allow the salad to marinate for at least 10 minutes before serving to let the flavors meld.

            Garnish with fresh cilantro leaves if using and serve chilled.
