Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle ranch seasoning (store-bought or homemade)

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup diced tomatoes

½ cup shredded lettuce

⅓ cup sour cream

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions

Marinate the Chicken: In a bowl, combine olive oil and chipotle ranch seasoning. Add chicken breasts, coating them well with the marinade. Let marinate for at least 30 minutes (or up to 2 hours in the fridge) for optimal flavor.

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Prepare the Burrito Filling: In a large bowl, combine cooked rice, black beans, corn, diced tomatoes, and shredded cheese. Mix well to combine.

Assemble the Burritos: Lay out a flour tortilla on a flat surface. In the center, add a portion of the rice and bean mixture, followed by sliced grilled chicken, shredded lettuce, and a dollop of sour cream.

Wrap it Up: Fold in the sides of the tortilla, then roll from the bottom up to form a tight burrito. Repeat with the remaining tortillas and fillings.

Grill the Burritos: Optional – for a crispy finish, place the burritos seam-side down on the grill for 2-3 minutes per side, until golden and crispy.

Serve: Cut each burrito in half and serve with lime wedges and fresh cilantro, if desired.
