Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 cups cooked chicken, shredded (grilled or rotisserie)

1 cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked white rice (or brown rice)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup pico de gallo (or salsa of your choice)

4 large flour tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Salt and pepper, to taste

Instructions
 

Prepare the Chicken: If you haven’t done so already, grill or shred the cooked chicken. Mix it with half of the chipotle ranch dressing in a bowl. Season with salt and pepper to taste.

    Warm the Tortillas: In a skillet over medium heat, warm each flour tortilla for about 30 seconds on each side until pliable. Remove and set aside.

      Assemble the Burritos: Lay a warm tortilla on a clean surface. Start by adding a scoop of rice (about 1/4 cup) followed by a layer of black beans, corn, and then the chipotle ranch chicken mixture (1/4 of the total). Top with cheddar cheese, pico de gallo, and a few slices of avocado.

        Wrap the Burrito: Fold in the sides of the tortilla, then roll from the bottom up tightly to create a burrito. Repeat with the remaining tortillas and filling.

          Grill the Burritos (Optional): For a crispy exterior, heat a grill pan over medium heat. Place the burrito seam-side down and grill for about 2-3 minutes on each side, until golden brown and crispy.

            Serve: Cut the burrito in half diagonally. Garnish with fresh cilantro and serve with lime wedges on the side for added zing.
