1.5 lbs chicken thighs (boneless, skinless)

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 tablespoon lemon juice

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving

Prepare the Cowboy Butter: In a bowl, combine the softened butter, minced garlic, parsley, cilantro, lemon juice, smoked paprika, onion powder, cayenne pepper, salt, and pepper. Mix well until all ingredients are fully combined. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper on both sides. Once the oil is hot, add the chicken to the skillet and sear for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should read 165°F).
