8 oz linguine pasta

1 lb boneless, skinless chicken breasts, diced

1/2 cup unsalted butter

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1/2 tsp cayenne pepper (adjust to taste)

1/2 cup chicken broth

1/4 cup heavy cream

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Cook the Pasta: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: In a large skillet over medium heat, melt 1/4 cup of the butter. Season the diced chicken with salt, pepper, and 1 tsp of smoked paprika. Add to the skillet and cook until the chicken is golden and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 1/4 cup of butter. When melted, add minced garlic, onion powder, and cayenne pepper. Sauté for about 30 seconds until fragrant.

        Incorporate Liquids: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, and add the cherry tomatoes. Let the mixture cook for another 3-4 minutes, allowing the tomatoes to soften.

          Combine: Return the chicken to the skillet, add the cooked linguine, and toss everything together. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
