Easy Spinach & Ricotta Stuffed Shells

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cups marinara sauce

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined.

        Stuff the Shells: Take a tablespoon of the spinach and ricotta mixture and fill each pasta shell with the filling.

          Assemble in Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a greased 9x13 inch baking dish. Place the stuffed shells on top of the sauce in a single layer. Once all shells are in the dish, pour the remaining marinara sauce over them and sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let the dish cool for a few minutes, then garnish with fresh basil leaves if desired. Serve warm and enjoy!
