8 oz (225g) penne pasta

1 lb (450g) chicken breast, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, oregano, and basil. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Combine Ingredients: Lower the heat and add the fresh spinach, cooking until wilted. Pour in the heavy cream and stir to combine. Gradually add the reserved pasta water until the sauce reaches your desired consistency.
