Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packets)

1 cup baby spinach

1 cup shiitake mushrooms, sliced

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon cornstarch (optional, for thickening)

½ cup heavy cream

1 tablespoon rice vinegar

Salt and pepper to taste

Red pepper flakes (for garnish, optional)

Soft-boiled eggs, for serving (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine gochujang, soy sauce, sesame oil, and a pinch of salt and pepper. Add the chicken thighs and coat well. Let it marinate for at least 30 minutes (or overnight for best flavor).

    Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes on each side until fully cooked and caramelized. Remove from heat, let it rest, then slice into strips.

      Prepare the Broth: In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute). Pour in the chicken broth and bring to a simmer.

        Cook the Noodles: Once the broth is simmering, add the instant ramen noodles along with sliced shiitake mushrooms. Cook according to noodle package instructions (usually about 3-4 minutes).

          Add Greens: Stir in the baby spinach until wilted and tender. If you wish for a thicker broth, dissolve cornstarch in a little cold water and add it to the broth now.

            Make the Creamy Garlic Sauce: In a small bowl, whisk together heavy cream, rice vinegar, and a pinch of salt. Adjust the seasoning if necessary.

              Assembly: Divide the cooked ramen and broth among serving bowls. Top with sliced chicken, drizzle with creamy garlic sauce, and garnish with chopped green onions and red pepper flakes as desired.
