1.5 lbs boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, thyme, and paprika on both sides.

    Cook the Potatoes: In a large skillet, heat olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

      Sear the Chicken: In the same skillet, add the seasoned chicken thighs. Cook for about 5-7 minutes on each side until they are browned and cooked through. Remove the chicken and set aside with the potatoes.
