1 pound sirloin steak, cut into bite-sized cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add halved baby potatoes and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, until tender. Drain and set aside.

    Sear the Steak Bites: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the cubed steak in a single layer. Season with salt and pepper. Sear for about 2-3 minutes on one side until browned, then flip and cook for an additional 2-3 minutes until desired doneness. Remove steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add another tablespoon of olive oil and the cooked potatoes. Cook them for about 5-7 minutes, tossing occasionally until they start to get golden and crispy.
