Garlic Butter Steak Bites and Potatoes

Ingredients
  

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: In a large pot, add the halved baby potatoes and cover them with water. Bring to a boil, then reduce to a simmer and cook until tender (about 10-12 minutes). Drain and set aside.

    Cook the Steak Bites: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, season the steak cubes with salt and pepper, then add them to the skillet in a single layer. Cook the first side for about 2-3 minutes until browned, then flip and cook for another 2-3 minutes until desired doneness (medium rare is ideal). Remove the steak bites from the skillet and set aside.

      Prepare Garlic Butter: In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic, rosemary, and thyme, cooking for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the cooked potatoes back to the skillet, gently tossing them in the garlic butter mixture. Then add the cooked steak bites to the skillet and toss everything together until evenly coated with the garlic butter.

          Serve: Transfer the steak bites and potatoes to a serving platter and garnish with chopped fresh parsley. Serve immediately while hot.
