500g boneless chicken thighs, cut into bite-sized pieces

150g plain yogurt

2 tbsp lemon juice

2 tsp ground cumin

2 tsp ground coriander

1 tsp garam masala

1 tsp turmeric powder

2 tsp paprika

3 tbsp vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

1-2 green chilies, slit (adjust based on spice preference)

400g canned tomatoes, pureed

200ml coconut cream or heavy cream

Salt to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, ground cumin, ground coriander, garam masala, turmeric powder, paprika, and a pinch of salt. Add the chicken pieces, coating them well. Cover and let marinate in the fridge for at least 1 hour, preferably overnight.

    Cook the Chicken: Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned on all sides (about 5-7 minutes). Remove the chicken and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of oil. Sauté the onions until they are soft and golden brown (about 8 minutes). Add the minced garlic, grated ginger, and slit green chilies. Sauté for 2 minutes until fragrant.

        Add Tomatoes: Pour in the pureed tomatoes and cook for 5-6 minutes until the sauce thickens and the oil separates from the mixture.

          Combine Chicken and Cream: Add the browned chicken back into the skillet. Stir in the coconut cream or heavy cream, mixing well until everything is combined. Season with salt to taste. Simmer on low heat for 10 minutes to allow the flavors to meld.

            Serve: Garnish with fresh cilantro and serve the Chicken Tikka Masala hot, accompanied by basmati rice or naan for a fulfilling meal.
