Greek Feta Roast Potatoes

2 pounds baby potatoes, halved

1/4 cup extra-virgin olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and black pepper, to taste

8 ounces feta cheese, crumbled

1 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and roughly chopped

2 tablespoons fresh parsley, chopped

1 tablespoon fresh lemon juice

Optional: Zest of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes, olive oil, dried oregano, garlic powder, salt, and pepper. Toss well until the potatoes are evenly coated.

      Roast the Potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and fork-tender, turning them halfway through for even cooking.

        Add Feta and Tomatoes: Once the potatoes are done, remove them from the oven and scatter the crumbled feta cheese and halved cherry tomatoes over the top. Return the baking sheet to the oven and roast for an additional 10-15 minutes, until the feta is warmed through and slightly golden.

          Finish and Garnish: Remove the potatoes from the oven, then sprinkle the Kalamata olives, fresh parsley, and lemon juice (and optional lemon zest) over the top. Toss gently to combine.

            Serve: Transfer the Greek Feta Roast Potatoes to a serving dish and serve warm as a delicious side dish or as part of a Mediterranean platter.
