Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

1/4 cup fresh lemon juice (about 2 lemons)

2 cloves garlic, minced

1/4 cup extra-virgin olive oil (plus more for drizzling)

Salt, to taste

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 cup diced cucumber

1/2 cup diced tomatoes

1/3 cup Kalamata olives, roughly chopped

1/4 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

Pita chips or fresh veggies, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, salt, cumin, and smoked paprika. Blend until the mixture is smooth and creamy.

    If the hummus is too thick, add a little water (1 tablespoon at a time) until your desired consistency is reached.

      Taste and adjust the seasoning with more salt or lemon juice as needed.

        Transfer the hummus to a serving bowl, and use the back of a spoon to create a shallow well in the center.

          Drizzle olive oil into the well for extra flavor and richness.

            Top the hummus with diced cucumber, tomatoes, Kalamata olives, crumbled feta cheese, and chopped parsley.

              Serve with pita chips or an assortment of fresh veggies for dipping.
