Grilled Tandoori Chicken

4 chicken thighs (bone-in, skinless)

1 cup plain Greek yogurt

2 tablespoons vegetable oil

Juice of 1 lemon

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons tandoori masala (store-bought or homemade)

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon salt

Fresh cilantro for garnish

Lemon wedges for serving

Instructions
 

In a large bowl, combine Greek yogurt, vegetable oil, lemon juice, minced garlic, grated ginger, tandoori masala, ground cumin, paprika, turmeric, and salt. Mix until well combined to form a marinade.

    Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for deeper flavor.

      Preheat your grill to medium-high heat. If using a charcoal grill, prepare the coals until covered with white ash.

        Remove the chicken from the marinade and shake off any excess. Discard the leftover marinade.

          Place the chicken on the grill, skin side down. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice char marks.

            Once cooked, remove from the grill and let the chicken rest for about 5 minutes. This helps to keep the meat juicy.

              Garnish with fresh cilantro and serve with lemon wedges on the side.
