1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

Juice of 1 lime

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Sliced avocado (for serving)

Salsa (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes.

        Season the turkey mixture with cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to combine.

          Add the black beans and corn to the skillet, mixing to combine with the turkey. Cook for another 3-4 minutes to heat everything through.

            Squeeze the lime juice over the mixture, stirring well to incorporate the flavor.

              Warm the tortillas in a dry skillet or microwave until pliable.

                To serve, fill each tortilla with the turkey mixture, garnishing with chopped cilantro and sliced avocado. Serve with salsa on the side.
