Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 tsp cumin

1 tsp paprika

1/2 tsp chili powder (optional)

Salt and pepper, to taste

2 cups shredded cheese (cheddar or a blend)

1/4 cup fresh cilantro, chopped (for garnish)

Olive oil, for cooking

Optional toppings: avocado, sour cream, or lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sweet Potatoes: In a medium pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 10 minutes or until fork-tender. Drain and set aside.

      Cook the Turkey: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Add Vegetables: Stir in the bell peppers and corn, cooking for an additional 5 minutes until the peppers start to soften.

          Brown the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Break it apart with a spatula, cooking until browned and fully cooked through, about 7-10 minutes. Drain excess fat if necessary.

            Season the Mixture: Stir in the cooked sweet potatoes, black beans, cumin, paprika, chili powder, salt, and pepper. Mix thoroughly until well combined and heated through.

              Assemble the Casserole: Transfer the turkey and sweet potato mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

                Add Cheese: Sprinkle the shredded cheese evenly on top of the mixture.
